One of Texas’ most successful boutique whiskey brands, Still Austin, is set to launch their new seasonal, and highly limited, Blue Corn Bourbon. 

This, the third expression in Still Austin’s Bottled in Bond series, will be available exclusively in their distillery on Friday, Nov. 24th. It will then be available in December at select liquor stores and online as well.

The Blue Corn Bourbon, a winter release, is symbolized by the winter crow. And for this whiskey, the brand turned to blue corn to invoke the “endless winter night sky.” 

The distiller’s notes show that the spirit has a deep, oaky flavor with hints of butterscotch and cinnamon. A real sipper by the fire.

The Blue Corn Bourbon has a mash bill of 26% Blue Corn, 25% White Corn, 44% Rye, and 5% Malted Barley. 

On the nose are aromas of cream soda and malted milk, with a hint of spiced plum and country apple cider. The palate has a velvety texture, with notes of dark-chocolate candied citrus, followed by the sweetness of carrot cake and buttercream frosting. It finishes with chewy notes of dark sherry and crème brûlée, with lingering notes of eucalyptus, oak spice, and black tea.

John Schrepel, Still Austin’s head distiller, said, “As a distiller, I’ve always wanted to push the boundaries with the amount of rye in a bourbon mash bill. With blue corn being such a sweet variety of corn, it was the perfect fit to achieve 44% rye in this bourbon blend. This is my personal favorite spirit that we’ve ever produced.”
