The Still Austin Whiskey Co., a Texas-based grain-to-glass operation, just launched their fourth seasonal Bottled in Bond spirit … Straight Rye Whiskey.
In this spring release, which is represented by the imagery of a rabbit, the whiskey maker used the spice of Texas-grown rye to convey their ‘taste of spring.’
This Straight Rye Whiskey expression marks the fourth and final seasonal installment in Still Austin’s Bottled in Bond series.
The whiskeys in Still Austin’s seasonal Bottled in Bond Series feature ingredients, flavors and themes of the seasons from which they were inspired.
The Straight Rye Whiskey is available in Still Austin’s Tasting Room in Austin, Texas, as well as online for purchase online and at select retail locations starting in March. The bottle has a suggested retail price of $79.99, and the whiskey clocks in at 50% ABV, 100 proof. It’s aged at least four years and has a mash bill made up of 100% Texas rye.
The distiller’s notes show that on the nose, the whiskey features spicy oak, vanilla bean, savory herbs, cherry pie and hints of white pepper. The palate has notes of soft oak, with dark honey, black tea, candied ginger, wintergreen, pecan, dried currant and cream soda. It finishes dry with notes of pink peppercorn, walnut and almond butter.
Jason Harry, brand experience manager at Still Austin, said, “Lead distiller John Schrepel and master blender Nancy Fraley have selected only the most well-developed barrels for this release to help showcase the uniquely exceptional character of Texas rye grain.”
The whiskey in this series is available in limited quantities, and only in the season of their release. The Bottled in Bond series utilizes a slow water reduction process. The artwork on the labels, created by renowned artist and native Texan, Marc Burckhardt, draws influence from the animals and the seasons while paying homage to the Texas terroir.
